The nougat, the typical dessert of Christmas and New Year, is a candy introduced by the Arabs. The story goes that the Arabs were seeking a nutritious food that could be maintained in good condition for long periods, with the idea of feeding their army. Yet another source claims it was invented by a craftsman in Barcelona, Mr. Turro, who created this sweet using simple raw materials, an indispensable resource in times of scarcity and famine. But what is exactly the ‘nougat’? Well, the nougat is created by cooking honey, adding toasted peeled almonds and egg white. This mix will produce the typical ‘Alicante nougat’ and ‘Jijona’ which are considered the most authentic nougat.
However, the ‘nougat-industry’ has added over the years new ingredients like chocolate, coconut, candied fruit, coffee and liqueurs. With that they have created a delicious family of different nougats!
